Heating instructions: Keep the meatloaf in the foil and place on a cookie sheet. Reheat at 375 degrees for 20-30 minutes. The vegetables can be reheated on top of the stove in a saucepan.

We LOVE this recipe!  We’ve served it several times as burgers but we are now going to make it into a meatloaf.  The chicken will stay very tender but won’t dry out as so many chicken breast recipes do.  The avocado provides a creamy texture to it and there is a little bit of heat from a small amount of jalapeno.  We’ll also serve this with sautéed vegetables but they’ll be sautéed in a healthy olive oil.   262 calories, 16.7 fat, 3.7 sat fat, 8.3 carbs, 3.6 fiber, .6 sugar, 21.3 protein
