We LOVE this recipe! We’ve served it several times as burgers but we are now going to make it into a meatloaf. The chicken will stay very tender but won’t dry out as so many chicken breast recipes do. The avocado provides a creamy texture to it and there is a little bit of heat from a small amount of jalapeno. Keep the meatloaf in the foil and place on a cookie sheet. Reheat at 375 degrees for 20-30 minutes. The vegetables can be reheated on top of the stove in a saucepan.
