This loaf is DELICIOUS. We use the good French lentils and add all kinds of healthy vegetables together. We pulse them all and add breadcrumbs and oats to bind them all together. This is the only lentil loaf we make because our customers would riot if we changed it. Served with mashed potatoes that are also vegan, and some lemon pepper green beans. You’ll never miss the meat!
Keep the loaf in the foil and place on a cookie sheet. Reheat at 375 degrees for about 20 minutes. The mashed potatoes and veggies can be reheated in the oven at the same time or you can reheat them on top of the stove.
