This dish reminds me of a tiny bistro in Winter Park, Florida where John and I would go to occasionally 30 years ago when we were first married. I had never even heard of Gorgonzola cream sauce, much less tried it but when I did I absolutely swooned! This dish is worth every single calorie, trust me. Gorgonzola is a lighter flavor cream cheese and when you cut it with cream it just melts so beautifully and clings to the cheese tortellini. We add prosciutto for a salty contrast and peas for a balance. You will love it!!
Please keep covered and heat in a 400 degree oven for 15-20 minutes
