My new obsession is Mexican Street Corn. I think it’s a lot of people’s new obsession. We love it on the cob but let’s face it, it’s not the most lady like thing to eat. So we’ll pull it off the cob, add all the great things to the casserole and top it with cheese. Problem solved!!
