Description
I made this for my son this week and it is AMAZING! The succotash is filled with zucchini, corn, red bell pepper, shallots and garlic and I add edamame for added protein. We cook it quickly all together and at the very end add fresh basil. Sitting on top is beautifully seared salmon which is SO GOOD for you and tastes delicious too!
Heating instructions:
Reheat on top of stove in a skillet until hot
