When I first returned from my trip to Italy I started cooking authentic Italian meals. The real deal like we experienced over there. One thing that stunned me was the copious amounts of absolutely delicious soups they have. I make a lot of lentil, chick pea (I’m going to put THAT on the menu one day) but the one star of the show is Pasta e Fagioli – Pasta and bean soup. We use Cranberry beans because honestly when cooked the flavor is unlike any other bean. Then we add vegetables, some homemade beef stock and a ham bone to flavor it. Tomatoes and tubular macaroni round it out and we top with just a little parmesan. This is great to order to have for lunches!
