There is nothing I like better than having a big bowl of meat that I can quickly zap in my microwave or reheat on top of the stove and taste such homey comfort. This Mexican shredded beef does just that. I huge boost in iron, lean beef is absolutely good for you and tastes even better. We slow cook this for hours in a wonderful Mexican broth, shred it and then serve it with so many things! Lettuce to make lettuce wraps, tomatoes, onions and cilantro, roasted veggies to marry in to the meat, radishes and cucumbers for crunch and then shredded cheese and sour cream (avoid eating this if you’re following Whole 30). This is a must try and a great new addition to our Mexican inspired meals!
