These are fantastic! I’ll find the biggest and sweetest sweet potatoes and bake them for you so your kitchen stays nice and cool. We then make a Mexican chicken filling (peppers, onions, chicken, seasonings) and when you stuff them into the potatoes they just go together like peas and carrots!
