This is going to be a new favorite for you!!! My good friend Joelle made this for me last week and I can’t stop thinking about it. It starts with a bed of arugula, then we will top it with a mix of rice and quinoa, grilled chicken or chick peas to keep it vegetarian, the you top it the way you want – we’ll include homemade hummus and homemade tzataki, some homemade lemon tahini dressing, kalamata olives, cucumbers, feta and tomatoes. It’s fabulous – I hope I can do her justice!
Heating instructions:
Heat the rice and chicken or chick peas in microwave or on top of stove in skillet. Then build the bowl the way you want to eat it!
