This is the REAL DEAL!!!! We don’t make this often for you because it’s a smokey process but boy is it worth it. I will NOT ever take a shortcut from the master of them all – Paul Prudhomme. He was the chef who invented the Blackened redfish and I won’t even buy his spices pre made. I make them exactly as I do when I received the recipe years ago. It’s my boys very favorite way to eat fish and it is not spicy so don’t be afraid of it. The flavor is amazing and we serve it with simple sautéed vegetables (yellow squash and zucchini). It’s absolutely marvelous!!
