This is THE most amazing stew you will ever have. I love it so much but unfortunately I can only offer it a couple of times a year when the Hatch chiles are in season. Hatch chilies are from an area in New Mexico and they are subtle but the most flavorful chile you will ever encounter. We slow cook chunks of pork in chicken broth with the hatch chilies and some onions, lime and cilantro and then add chewy and toothsome hominy. Topped off with radishes, it is truly a taste unlike anything you’ve ever experienced. I can’t wait to share it with you!!!
