No other meal in my vast assortment of meals will remind me not of just my mother in law (a great cook) but of my sweet mom (fun, life of the party, not such a great cook). Chicken with chipped beef and bacon is JUST that dish! This is one that my mom could bust out like there is no tomorrow and everyone scarfed it up. When I married John much to my surprise my mother in law made it all the time too! It’s pretty simple but if you do it right you cook it for hours (who has time for THAT anymore) so the chicken practically falls apart and the delicious gravy soaks up all the flavors of the salty chipped beef and chicken. We serve it over a bed of fluffy white rice and it is pure perfection. If you want to go back to the 60’s, open up a can of La Sauer peas to go along with it. This will evoke memories in all of you too. If it won’t, conjure up your own. It’s really THAT good!
Reheat at 350 degrees, covered for 20-25 minutes or until hot and bubbly
