Monday, February 2
Slowly braised short ribs, pulled apart and nestled into grilled cheese sandwiches. We did this one time and people loved, loved, loved it! Served with your choice of homemade chicken noodle or cream of tomato soup
Healthy meal: curried chickpeas and black beans. A delicious vegetarian curry but we can add diced chicken to this dish. Served on a bed of shaved cabbage.
Salad of the day: Mandarin and greens with a slightly sweet vinaigrette.
Tuesday, February 3
VIETNAMESE PORK!!! Utterly delightful. Your taste buds will be bursting with the umami flavors that we pull through from this crunchy yet melt in your mouth goodness! Served with rice or rice noodles.
Healthy meal: Shrimp egg foo yong! Taking you back old school style – this was the rage in the 60’s. But only in San Francisco!! But it’s really good, like a big shrimp omelet
Salad of the day: Traditional Chinese chicken salad with the crunchy noodles
Wednesday, February 4
FAKE OUT FETTUCCINI ALFREDO: More than half the calories are cut but you will NEVER know the difference. Neither will your kids!! Request blackened chicken if you’d like it on top. Served also with broccoli.
Salad of the day: Antipasti. A plate that you can’t help but walk by and grab a morsel or two (picture is in the original post). It’s so tangy and crunchy and good!
Thursday, February 5
FAKE OUT CHICKEN FRIED STEAK!! Including gravy, and we’re slashing calories again WITHOUT substituting flavor. Yes, you’ll feel like you’re in Texas today. For the healthy option, you’ll get green beans on the side. For the indulgent, homemade macaroni and cheese.
Salad of the day: My mother in law’s marinated beans and peas. It’s awesome, and affordable: $8.00 per quart. They last FOREVER in the fridge too!
